Texas Pecan Pie, Low Carb (Jack Daniel’s Honey)

This is the kind of recipe that shouldn’t exist. A real Texas pecan pie — syrupy, rich, chewy, and sliceable — rebuilt to be genuinely low-carb without tasting low-carb. No custard shortcuts, no weird textures, no “keto dessert” vibes. It eats like classic pecan pie, full stop. The fact that a pecan pie can be this low-carb at all is the miracle.

Ingredients

  • Butter for greasing the pan
  • ½ cup allulose
  • ½ cup monkfruit erythritol blend
  • ½ cup allulose syrup
  • 2 Tbsp blackstrap molasses
  • 4 egg room temp, light beat
  • 4 Tbsp butter melted
  • Tbsp Jack Daniel’s Tennessee Honey whiskey
  • tsp vanilla
  • ¼ tsp salt
  • cup pecan roasted, chop, no dust

Instructions

  • Butter a standard 9" metal pie plate generously, including sides.
  • Combine allulose, monkfruit erythritol blend, allulose syrup, and molasses in a saucepan and bring to a low boil, stirring until fully dissolved.
  • Remove from heat and cool until warm but not hot.
  • Slowly whisk warm syrup into eggs to temper.
  • Whisk in butter, whiskey, vanilla, and salt.
  • Spread pecans evenly across the bottom of the prepared pie plate.
  • Pour filling slowly over the pecans, allowing it to settle naturally.
  • Bake in a 350°F preheated oven for 45–50 minutes, until the center puffs up and cracks.
  • Remove from oven and cool completely; filling collapses back into place as it sets.

Notes

This pie is intentionally baked until the center puffs and cracks; that’s how pecan pie finishes setting and is not a mistake.
The filling will collapse back into place as it cools and slice clean once fully set.
Chopped pecans eat better than whole halves and distribute more evenly through the filling.
A metal pie plate sets this pie better than glass.
For the cleanest slices, chill at least 1 hour before cutting.
A thin store-bought pie shell can be used if desired; expect additional carbs from the crust, but the filling remains low-carb.
