Sugar free strawberry jalapeno jam takes the classic sweet-heat pairing and drops the sugar that usually carries it. Fresh strawberries crush into a loose, spoonable set with allulose and Pomona’s pectin, then pickled jalapeno folds in for a warm kick that shows up after the sweetness, not instead of it. Nothing about the finished jar reads like a compromise.

Why Pickled Jalapeno Instead of Fresh

Fresh jalapenos run wildly unpredictable, the same pepper can land mild one week and genuinely hot the next, since heat comes down to growing conditions that vary jar to jar and grocery run to grocery run. Pickled jalapeno solves that outright: the brining process itself tames and standardizes the heat, so the same tablespoon delivers the same warmth every single time a batch gets made. That consistency matters more in a jam meant to be repeatable, not a one-off experiment. The same pickled-pepper approach shows up in the site’s Sugar Free Chow Chow, where jalapeno also carries heat without the guesswork.

Draining and drying the pickled jalapeno before dicing keeps the brine’s vinegar and salt from thinning the jam or fighting the strawberry for flavor. The pepper contributes heat and texture, the fruit still leads.

Getting the Set Right

Pomona’s pectin sets on contact with calcium, not from sustained heat. Once the jam reaches a real rolling boil, the set reaction is essentially immediate rather than something that builds over several more minutes. Bring the jam to a full boil, hold for a minute or two to confirm it is rolling throughout rather than just bubbling at the edges, then test right away instead of boiling longer.

The jam also keeps firming for hours after the jar leaves the stove. If it already looks fully set while still hot, it has gone past the point to pull. A properly timed batch looks loose and barely holding on a cold-plate or cold-spoon test while warm, then reaches its real set overnight in the refrigerator.

Crushing most of the strawberries with a potato masher and dicing the rest gives the best of both textures: the mashed portion carries pectin evenly through the batch, while the diced portion keeps real strawberry pieces intact instead of dissolving completely into the base.

Serving Ideas

This sugar free strawberry jalapeno jam works anywhere a classic jam would, with a little extra warmth built in:

  • Cream cheese and crackers
  • Biscuits or cornbread
  • Grilled pork chops or chicken
  • Charcuterie boards
  • Grilled cheese sandwiches

Storing Strawberry Jalapeno Jam

This is a refrigerator jam, not shelf-stable as written. Properly sealed and refrigerated, it holds its set and flavor for weeks. The jam continues to firm up over the first 24 hours after cooling, so it jars looser than the final target on purpose.

Every sweetened recipe on this site pulls from the same short list of substitutes, allulose leading the way here too, same as in the Low Carb Ingredient Substitutes guide.

Notes

Refrigerator jam only, not shelf-stable as written; canning guidance available through NCHFP.
Pomona’s pectin sets on contact with calcium, not from sustained heat, so once the jam reaches a real rolling boil the set reaction is essentially immediate. Hold at a rolling boil for a minute or two to confirm it is boiling throughout, then test right away rather than boiling longer.
The jam also keeps firming for hours after the jar leaves the stove. If it looks fully set while still hot, it has already gone past the point to pull. A properly timed batch looks loose and barely holds on a cold-plate or cold-spoon test while warm, then reaches its real set overnight in the refrigerator.
Drain jalapeno well and pat dry before dicing; excess brine thins jam and pulls in unwanted flavor.
For more heat, increase pickled jalapeno to 1/4 cup, drain, dice.
Buy one 1 lb container of whole strawberries per batch.
Leftover prepared calcium water keeps refrigerated for months. Shake before use, and discard if it develops mold, an off smell, or unusual cloudiness beyond normal settling.
Pomona’s Universal Pectin is calcium-set and works at low sugar levels unlike standard pectin, which is why it is the house standard; find it at most grocery stores in the baking aisle or canning section, or order online if unavailable locally.
If jam foams while boiling, drop in pat of butter and keep stirring; foam settles.
