Ingredients
Brine Cucumber Slices:
- 1 English cucumber, slice
- 1 tsp pickling salt
- ¼ onion, large dice
Sweet & Sour Mix:
- ½ cup rice vinegar, seasoned
- ¼ cup water, room temp
- ¼ cup allulose sweetener
- ½ tsp red chili flakes
- ⅛ tsp Xtra Crunch calcium chloride
Instructions
Slice and Salt:
- Slice cucumber into ⅛″ thick slices.
- Place cucumber slices in a bowl.
- Toss cucumber slices with salt.
Rest:
